All stages of winemaking are carried out with scrupulous attention to detail and the support of cutting-edge winemaking techniques, based on environmental protection and integrated farming, a perfect blend of organic and conventional methods.
With these principles in mind, the winery has pursued the goal of interpreting and enhancing its vineyards, capturing the finest characteristics of the highly mineralized volcanic soil on the slopes of Mount Calvarina in the wine it produces.
TASTING NOTES
The Lessini Durello DOC Riserva 100 months is a rich, bold, and evolved Classic Method sparkling wine, produced from volcanic soils at 600 meters above sea level on Mount Calvarina, in the province of Verona. It is made with 85% Durella grapes and a small percentage of Pinot Bianco, which gives it roundness. Thanks to the abundant basaltic rock in the soil, our Lessini Durello has distinct saline and flint mineral notes. The long aging on the lees gives it an incredibly fine and persistent perlage, a complex bouquet on the nose, and a pleasantly dry and fresh palate that excites the palate.
OUR RECOMMENDATIONS
It pairs well with sophisticated aperitifs, including those featuring black caviar or foie gras, mustards, saffron risotto, and lobster linguine. Finally, it can be enjoyed as a toast at the end of a meal or paired with almond pastries.
