The Amarone della Valpolicella Classico DOCG "CampoRocco" is produced with grapes grown in the Valpolicella Classica vineyards, located at 350 meters above sea level on terraces supported by dry stone walls, known as "marogne." The soil is of morainic/calcareous origin and lends the grapes excellent acidity, making them suitable for a wine destined for aging. After selecting only the highest-quality grapes, we delicately lay them on wooden trays to dry for a long time. After pressing, we ferment the must with the skins during maceration, controlling the temperature of the tanks. After racking, the wine is placed in new French oak tonneaux, where it ages for approximately 36 months. This process results in a wine with an unmistakable structure, often served on special occasions and at prestigious dinners.
OUR RECOMMENDATIONS
Its structure, flavor, and aromas certainly allow us to pair it with rich red meat dishes, such as pastissada de caval (a typical Veronese dish dating back to chivalry), and even with aged cheeses. But if you want to break the mold, try it with Sacher torte or a fig compote.
