A tough and rich variety of durum wheat, it offers its best when grown in Puglia. Expertly interpreted by the master pasta maker, when cooked, it releases its aroma of summer hay, lightly scented with desiccated coconut and freshly cut stretched curd. The flavor is primordial, reminiscent of stone-baked bread, butter, and bamboo.
