    The small Georges Laval winery has been producing champagne since 1971, in a small village called Cumières. Only three hectares of vineyards are planted here, a small plot of land that has always been cultivated according to the strict principles of organic farming. Georges Laval, in fact, was one of the first to dedicate himself to the production of organic champagne in the 1970s and, for many years, remained one of the few faithful to this type of farming. The Georges Laval winery, now entrusted to Vincent Laval, continues on the path of eco-sustainability, categorically excluding the use of pesticides and any other substances that could harm the environment or in any way alter the naturalness of the wine. The transformation of grapes into wine is carried out, avoiding, in most cases, invasive cellar operations. The Laval winery has always grown the main Champagne grapes, namely Chardonnay, Pinot Noir, and Pinot Meunier; all the vineyards are classified as Premier Cru and are between thirty and seventy years old.

    A Brut Nature produced only in the finest vintages with Chardonnay grapes from a single vintage and a single vineyard, Les Chens.

    The grapes, once perfectly ripe, are hand-harvested and pressed in a traditional Champagne press. During pressing, a very low dose of SO2 (less than 30 mlg/l) is added to the juice to prevent oxidation. The must is placed in oak barrels where natural indigenous yeasts transform it into white wine. Aging lasts ten months. After an initial aging in oak barrels, it remains in the cellar for at least four years.

    It is an enchanting champagne with a fine, silky perlage and delicate aromas of ripe fruit and flowers, with slightly balsamic nuances. On the palate, it is soft and generous, with floral and mineral notes of great pleasure and persistence. The quality of the grapes, the long vinification period, and the small volume of the barrels allow for natural clarification of the cuvées, without any decolorization products, sizing, or filtration.

    Ideal with appetizers and fish, shellfish, and white meat dishes.
