The small Georges Laval winery has been producing champagne since 1971, in a small village called Cumières. Here, only 3 hectares of vineyards are planted, a small plot of land that has always been cultivated according to the strict principles of organic farming. Georges Laval, in fact, was one of the first to dedicate himself to the production of organic champagne in the 1970s and, for many years, remained one of the few faithful to this type of farming. The Georges Laval winery, now entrusted to Vincent Laval, continues on the path of eco-sustainability, categorically excluding the use of pesticides and any other substances that could harm the environment or in any way alter the naturalness of the wine. The transformation of grapes into wine is carried out, avoiding, in most cases, invasive cellar operations. The Laval winery has always grown the main Champagne grapes: Chardonnay, Pinot Noir, and Pinot Meunier; All the vineyards are classified as Premier Cru and are between thirty and seventy years old.
The Garennes cuvée is a blend of various Pinot Noir, Chardonnay, and Pinot Meunier wines, as well as reserve wines. The must ferments in barriques using indigenous yeasts, and the wine is aged in the same type of container. These processes give the wine intense body and structure. The extra-brut dosage requires 1g of sugar per liter. This cuvée stands out for its remarkable aromatic freshness, characterized by floral notes and citrus aromas. Complex and persistent, it will perfectly accompany refined dishes such as fine fish, white truffle risotto, or ginger-flavored salmon tartare.
